Turn Bitter Gourd Into a Delicious Dish with This Karela Kalonji Recipe

Bitter gourd also known as karela, may taste bitter but it is packed with health benefits. This green vegetable is often used in Indian kitchens to manage health issues like diabetes, high blood pressure, and poor digestion. It is full of essential nutrients and is commonly eaten as a curry or in juice form.


Karela Kalonji Recipe:

One of the most delicious ways to enjoy bitter gourd is by making a dish called Kalonji. This spicy and flavorful recipe is not only easy to prepare but also combines both health and taste perfectly. Many people are not familiar with this version of karela, but once tried, it often becomes a family favorite.

Ingredients You Need:

To make this dish, you will need bitter gourds, mustard oil, cumin seeds, asafoetida (hing), poppy seeds, fennel powder, coriander powder, turmeric, dry ginger powder, garam masala, salt, dry mango powder (amchur), and green chillies.


How to Prepare:

Start by washing the bitter gourds well. Cut them in half lengthwise and remove the seeds. Then, boil them in hot water for a few minutes so they become soft. After boiling, take them out and let them cool.

Next, heat mustard oil in a pan. Add cumin seeds and a pinch of asafoetida. Once they start to crackle, add the poppy seeds and other dry spices. Stir well and cook for a few minutes until the mixture turns aromatic. This spicy mix is the stuffing for the karela.

Now, fill each boiled bitter gourd with this mixture. In a separate pan, heat some oil and gently fry the stuffed bitter gourds on low heat until they are golden brown and crisp.

Serve hot with chapati, rice, or dal. This dish not only satisfies your taste buds but also supports good health. Including bitter gourd in your diet regularly can boost your immunity and help manage blood sugar levels naturally.
