Chana dal and urad dal
Curry leaves, coriander, green chili
Asafoetida (hing), salt

Simple 7-Step Preparation:
1. Heat oil and temper mustard, cumin, dals, curry leaves, and green chili.
2. Add semolina and roast slightly.
3. Mix in grated carrots and cook gently.
4. Add oat flour and salt, then stir well.
5. Let the mixture cool and add water slowly to form batter.
6. Rest the batter for 15–20 minutes.
7. Grease idli molds, pour batter, and steam for 15–20 minutes.
Serve with coconut chutney or sambar. These idlis are soft, healthy, and satisfying.
