You will need raw mangoes, plus a few basic spices; some salt, yellow mustard, red chili powder, turmeric, and hing (asafoetida) for aromatics, and fennel seeds, fenugreek seeds, and kalonji (nigella seeds) too. A little water helps with mixing and marinade, and these spices create a brightly colored masala.
Wash the raw mangoes thoroughly. Cut mangoes into Small pieces. Mix the spices with water in a plate, and knead the masala for 10-12 minutes, this helps release the natural oils from the spices. Coat the mango pieces with the masala and transfer to a clean jar. For the next two days leave jar in sunlight. And, then transfer your jar to the fridge.
Use a sterilized airtight jar. Keep it dry to avoid spoilage. Store in a cool, dark place. After two days, avoid heat and sunlight. After any exposure to sunlight, refrigerate. The pickle remains fresh for three months. Proper storage ensures a long-lasting flavor.
